Three Ingredient Crockpot Recipes

No matter how old you are or what stage of life you may be in, I’ve realized that dinner always seems to be stressful. Everyone is asking, “What’s for dinner?” and no one knows. When I was growing up, my mom threw in a Tombstone Pizza everytime she didn't know what to make and didn’t feel like cooking. When I was in college and I didn’t know what to make for dinner it usually resulted in pasta. And now during quarantine, for some reason, the thought of making dinner seems like so much work and the family usually ends up eating a meal that no one likes and isn’t nutritious.

I have three 3 ingredient crockpot recipes that take very little effort and are very delicious. Over the years, I have looked at so many recipes and a lot of the time I put the word “easy” in google when I didn’t feel like being a gourmet chef that night. These recipes that I have found and made my own are so simple a monkey could do it!

Chicken Tacos

Dump all ingredients into the crockpot:

1 pound chicken

1 jar of your favorite salsa

1 tbs chilli powder

Cook on low for 6-8 hours. This can be served with tortillas or my favorite switch: Romaine lettuce. Using romain instead of the tortilla cuts down on calories, carbs and being bloated.

I serve this with a few slices of avocado, cheese and sour cream on top. But you can make it your own!

*For this recipe you can add other seasonings if you would like. It depends on your taste preference and how spicy you want your tacos. Other seasoning could be garlic powder, cumin, salt, pepper, chilli flakes, etc.

Olive Garden Dressing Chicken

Everytime I make this recipe, friends and family devour it. There are never any leftovers. I found this recipe from a blog called Never Ending Journeys three years ago. This is a good one!!

Dump all the ingredient in the crockpot:

1 pound chicken

16 oz Olive Garden Italian Dressing

¼ cup grated parmesan cheese

Cook on low for 8 hours. This can be served with romaine lettuce, a bun or plain.

Balsamic Salsa Chicken

This recipe may sound weird but it works!

Dump all the ingredients in a crockpot:

2 pounds chicken

1 jar of your favorite salsa

½ cup balsamic vinegar

Cook on low for 6 hours. This is great served with romaine lettuce, tortillas, etc. I found this recipe about 3 years ago from a blog called SkinnyMs

Being in quarantine may have us feeling like we should spend more time cooking and making five course meals, but let's be honest… no one is doing that. These recipes are quick, simple and can make the house smelling as if you spent all day cooking. Try them out and find creative ways to make them your own!
