Peanut Butter & Fruit Packed Oatmeal

Something funny for my family and me is all of the breakfast recipes that I have and put on the blog. In high school, I used to eat spaghetti, ice cream cake, pizza, or whatever leftovers I could find for breakfast. I have always eaten something for breakfast but never actual breakfast food. I think it might be from all of the “Just add water” pancakes and meals my dad used to cook for me. Sorry, dad.

It was not until about two years ago that I started thinking of more creative breakfasts to eat and making sure that they were packed with nutrition. I wasn't spending 3 hours at basketball practice every day anymore so I couldn't get away with ice cream cake for breakfast. That was a sad day of realization.

Something that I discovered that I LOVE to have for breakfast since quarantine is my super easy peanut butter and fruit-packed oatmeal! My mouth is watering thinking of it so let’s just get right to the recipe!

Peanut Butter Fruit Packed Oatmeal

¼ cup Oatmeal

¼ cup Almond milk

1 tbs Peanut butter

1 tbs Greek yogurt (plain)

1 Banana

1 tbs chia seeds

As many strawberries, raspberries and blueberries as you want

***An optional ingredient to add instead of peanut butter is Orgain Organic protein powder!!***

-Place the oatmeal and almond milk in a bowl and cook in the microwave for about 2:30-3:00 minutes.

-Scoop the peanut butter out of the jar and use it to mix up the oatmeal.

-Cut up the banana and place in the bowl

-Place Greek yogurt, chia seeds and the rest of your fruit into the bowl

-Drizzle the top with honey and enjoy!

This breakfast is packed with fiber, protein, antioxidants, and vitamin C!
